Soya Chunks Vegetable Rice (High-Protein One-Pot Meal)
A flavorful and protein-rich one-pot rice dish made with soya chunks, whole spices, vegetables and fresh herbs — perfect for a healthy lunch or dinner.
Ingredients
- Oil
- shahi jeera
- cinnamon stick
- cloves
- cardamom pods
- bay leaf
- dagad phool (stone flower)
- sliced onion
- chopped carrot
- slit green chillies
- soaked soya chunks
- chopped mint leaves
- ginger garlic paste
- salt
- coriander powder
- water (2 cups per 1 cup rice)
- rice (1 cup)
- chopped fresh coriander leaves
Instructions
Heat oil in a pressure cooker or deep pan.
Add shahi jeera, cinnamon, cloves, cardamom, bay leaf and dagad phool, sauté until aromatic.
Add sliced onions and fry until soft and light golden.
Add green chillies, carrots and ginger garlic paste, sauté for 1–2 minutes.
Add soaked soya chunks and mix well.
Add mint leaves and coriander powder, stir nicely.
Add salt and mix once.
Pour in water using the ratio of 2 cups water for 1 cup rice.
Add rice and gently mix everything together.
Cover and cook until rice is fluffy and the soya chunks are soft and cooked through.
Switch off heat, rest for 5 minutes and fluff gently.
Garnish with fresh coriander leaves and serve hot..
