Chikkudukaya Curry (Broad Beans Fry)
A simple, healthy, and flavorful Andhra-style chikkudukaya curry made with fresh broad beans, aromatic spices, and crunchy cashews.
Ingredients
- Oil 2 tbsp
- mustard seeds 1 tsp
- cumin seeds 1 tsp
- cashews 10 pieces
- green mirchi 2 slit
- onion 1 chopped
- ginger garlic paste 1 tsp
- turmeric 1/4 tsp
- salt to taste
- chilli powder 1 tsp
- coriander powder 1 tsp
- chopped chikkudukaya (broad beans) 2 cups
- coriander leaves for garnish
Instructions
Heat oil in a pan.
Add mustard seeds and cumin seeds, let them splutter.
Add cashews and fry until light golden.
Add green mirchi and chopped onion, sauté until onion turns soft and light brown.
Add ginger garlic paste and cook until raw smell disappears.
Add turmeric, chilli powder, coriander powder, and salt, mix well.
Add chopped chikkudukaya and mix with spices.
Cover and cook on low flame for 10–15 minutes, stir occasionally.
Cook until beans are soft and well coated with masala.
Garnish with fresh coriander leaves.
Serve hot with rice or roti..
